This recipe is heavily adapted from Smitten Kitchen's even more perfect apple pie recipe.
Make filling: Toss to combine all filling ingredients except tapioca flour in a very large bowl. Let macerate for 1.5 hours before adding tapioca flour, stirring well to combine.
Preheat oven to 200 degrees celsius.
Assemble pie: Pour macerated apples (and ALL liquid) into pie base. Cover with pie lid, and cut vents in the shape of a smiley face.
Bake pie: Bake for 75 minutes, turning once of twice for even colour. If pie is browning too quickly, wrap with aluminium foil.
Rest for an hour before serving.
